they give out (or used to) rewards like gift cards. they promote a fun environment by playing music during shifts and they have a lot of company-wide and store specific gatherings for employees
eta: they really stress the whole secret customer thing because the highest rated stores get perks

knowing former employees, this is true. they have crawfish boils and whatnot.
