Need five small plate suggestions

for this evening.

Since I have a few pieces of fresh tuna I have one plate. Seared tuna with a chili citrus vinaigrette over baby greens.

I have on hand, three links sausage, one pork tenderloin, three chicken breast bone in, one New York Strip, pint of raw oysters, onions, carrots, celery, red bell peppers, two tomatos, several golden bets, cabbage, flour and corn tortillas, homemade pickles, mustard and red onions as well as ten different cheeses.

I can buy whatever else I need.

Only serving red wine.

Serving eight people. Need some ideas.

I also have edamame, Mickey Browns deer burritos and tamales and just pulled ten nice carrots and a bunch of fresh cilantro from my garden.

This can be used as well.

What about that stuff where you "cook" the tuna in lime juice? Is it cevachi or something like that? That stuff is great.

You could put the cilantro in with the tuna or do some cooked carrots with cilantro. When u get it from the garden its so much more potent.

Set up a serve yourself buffet for tacos/fajitas with the chicken,tomatoes,cilantro and cabbage.

Tortillas, cabbage and cilantro- sounds like a taco of some sort- use with any of those proteins except oysters.

Maybe take the sausage out of the casing, stuff it in te tenderloin wibead own cheese and a little onion and serve it with a mustard sauce?

Do a charcuterie plate with the sausages, cheese, some mustard, preserves and crackers of some type.

any way to stuff the sausage and chicken in the tenderloin and smoke, or bake and then slice? could call it a sauchipigen...

I ain't doin all that shite.

No cerviche. The tuna is done. Thinking baked oysters.

And I just put some chopped onions and celantro with a bit of lime juice in the icebox to marry a bit. Will put out a taco spread with chicken and medium pork sliced thin, cabbage, pickled onions etc...

Might save the sausages for another day.

Roast the beets and char and roast the red bell peppers. Make a purée with the golden beets and grill the strip midrare. Slice thin and fan out on the plate. Fry up the oysters and take the red peppers and purée them and mix with some sour cream (maybe add a little spicy peppers) for a little dip with the oysters....

Close. I prefer the beets roasted and sliced with goat cheese but I might use a bleu cheese crumbled with them along with the pork for a little different idea. Light pan juice over the pork. Probably roast a few carrots with the beets since I have them also.

One new york strip....hmmmm.

Possibly slice it thin and do a few quesadillas? You have plenty of cheese.

Maybe stuffed bell peppers w the sausage?

Bake or chargrill those oysters in your handy dandy scallop dishes. You could use that mignonette sauce you mentioned last night for the baked oysters, perhaps.

Someone brought me a cold thin sliced pork tenderloin with a cold this brown sauce made with pan gravy and some great deviled eggs stuffed with jalapenos. Odd combo, but it was very good. Had the pork fanned on pretty romaine or maybe it was butter lettuce.

Is the sausage in casing? Cheese and sausage plate with some good mustard and maybe a quince jelly or something similar and good crackers?

How do you keep your cilantro growing? Mine goes to seed after some weeks.
