Don't know if you've searched TD, lately, but the search options have changed and, for lack of a better description, they suck. Can't find much of anything anymore, easily, if at all.
To the OP...for your first shot at gumbo, make chicken and andouille. It's more forgiving than seafood gumbo if you screw up.
If you don't use Tree Dawg's go to the Paul Prudhomme site and start with his. It's a fried chicken gumbo and it's very good. You can figure out your consistencies after you do it the first time, but if you follow the instructions, initially, you'll have a fine outcome. You can adjust to your tastes the next time around.
