Get one of the SS or aluminum THICK bottom pots for soups at ducotes on airline.

Tons of sizes, choices, and great prices

they're open to the public

I've used my old school Magnalite in the past and it's been great. But I received an All Clad 16 qt for Christmas 2 years ago from my parents. I wouldn't suggest starting out with an All Clad, but if you're serious about cooking and when you're ready to invest, it's amazing to cook with. A low heat is distributed throughout the pot.. so you can cook slow on a low fire and make the best gumbo of your life.

I use a cast iron pot. It has an "8" on it, which I assume is 8 quarts.

I do gumbos, jambalayas, etouffee, red beans n rice and chili in it. It's old and well seasoned.

I've tried a number of alternatives, but this is the only pot I use any more. I find it very easy and fast to get a dark roux in it.

I'd like it better if it were a hair bigger, but it has become my reliable partner in the kitchen.

This. I used to use a stainless steel, but I much prefer using my cast iron.

I'm interested in trying out a Le Creuset. I bet a chicken and sausage sauce picante would kick arse in one of these bad boys.

Tuesday Morning has had some LeCreuset marked down.

But I have been using my 12 quart cast iron for years. Can't Imagine anything better
