The Best Dish You've Ever Cooked

After spending some time in here I realize many have eaten at some really nice restaurants and can cook some really delicious sounding food. What was the best thing you have ever personally prepared? Was it just a weeknight meal or a special occasion?

Makes my chest hurt.
Everything I cook is the breast. I mean, best.

Baked salmon with a lump crabmeat buerre blanc sauce... pulled that off one time perfectly and it wowed the whole group.
I do a really good BBQ shrimp as well.

Here are some top things I like to cook...
1) Veal Piccata
2) Broiled salmon stuffed with goat cheese and fresh dill, topped with hollandaise.
3) Chicken Florenzia (it's a dish I made up) - Basicaly a breaded portobello cap, baked, and topped with fresh, steamed spinach, then topped with a flattened chicken breast pan fried in clarified butter, topped with smoked gouda cheese and all smothered in alfredo sauce.

I think it was about inflatables.

Dem things I would liken more to the Hindenburg, and it did go out with a bang.
For Iranians, chicken tadik
For French folks, cassoulet they said was like grandmeres
For mom, a stuffed roasted leg of lamb and fixings
For a long gone friend of the family a duck dish three hours in the making, along with my first batch of cherries jubilee.

I don't really cook anything too fancy but a few things that I think I cook well would include
Veal Marsala
Osso Bucco
Steaks
Butternut Squash Soup
Sometimes I'll get lucky and make a good curry
Palak Murgh
I'm getting pretty good with gumbo and some other soups/stews but that's all easy.
If it involves any sort of really high level techniques I'm going to screw it up.
I'm good at combining flavors, not so much with technique

I don't know what dish is "best". One of my favorite things to make and serve is a crabmeat and spinach timbale with a buerre blanc.

Recipe? This is a dish I have struggled with a few times, to get just right.
