I don't have a recipe per say but this is what I do

Render some bacon fat in a pot and remove bacon
Brown a mix of cubed pork and cubed beef and set aside. Deglaze pot with shiner bock as I go.

Dice one large onion and an assortment of about 25 peppers leaving the seeds in 4 jalapenos

Add more bacon fat to the pot, add whole cumin seeds, diced peppers, onions, and about 4 minced cloves of garlic and cook until you start getting a little brown.

Add browned meat back to the pot and 1 bottle of shiner bock

Slow cook until tender

Ground beef is ok in a chili but I think it should be IN ADDITION to the cubed beef.

Things that shouldn't go in a chili IMO are: tomatoes, beans, and chili powder. It's a fricking chili so put chilis in it. You don't need to add chili powder.
