Categories for Judging a Cook-off

We're having a sauce picante cook-off at my house for the game saturday and I have 3 judges that will be independent. I'm looking for a couple of categories that we can use to judge the dishes. What would be the categories you would use on a scoring sheet? TIA!

In order of importance I'd say

Taste
Consistency
Appearance

Then you've got the vague thing of if you prefer a classic or a twist on a classic. I've never thought that preference was really fair when judging something

I'd also throw in something for "creativity". "Appearance" is usually how the "visual" category is listed.

well, uh, if he's having this contest at his house, in his kitchen, then whichever feller dirties up the least dishes ought to at least get some bonus points..
