I live here in Knoxville and here is what I would recommend: the boats are tied together and everyone walks across each other's boat to get to shore-if you don't want puke/piss on all your LSU stuff I wouldn't do it. Besides, you are better off being on foot around campus, the boat thing gets old after a while. Calhouns is a good place to start off, but it gets overcrowded quickly thus the service starts slowing down and gets poor. If you are looking for good food Knoxville has it. I usually stay down in the Cumberland Ave area, plenty of great places to eat, college girls everywhere, and a brisk walk will get you to the stadium. If you are looking for a hotel room, do whatever you can to stay in Bearden/Downtown, the cops are horrible up and down the interstate traveling back to West Knoxville.
