Thanks for posting this. Love it!! I cooked a jambalya last night and have to do another one next week for my son + friends on Grand Isle!

Ok guys, if this link doesn't work it's because I'm a noob. I've never tried to link a file like this so bare with me and I might have to get someones help linking this thing. Forgot to mention...Change the number of people you are feeding and it gives you the totals in pounds you need to cook.

Worked for me. thanks.
According to this, pork butt retains 65% of its weight after cooking. I wonder about the change in volume, though.

Looks great Rat. Nicely done. Better than I envisioned.

Hey Stadium Rat, I used your Jambalaya Calculator this weekend and I wanted to give you a shout out!
I've had a 10 gallon pot for about 5 years, but have never cooked more than half a pot (5 lbs of rice), I just haven't had the occassion to cook for 100 people. So I used your jambalaya calculator (version 1.0) to assist me with ratios and quantities, etc. on a full pot. It was very useful, and the jambalaya came out great! Best I ever made, truth be told. I tweeked a few things of course, but the rice to liquid ratio was spot on. I keep a little less than two cups of the meat fat in the pot, so I reduce my stock quantity by that amount.
Any way, thanks for all the effort you put into the jambalaya calculator. It's a great tool and you are very generous for sharing it!

Thanks for letting me know. I've continued to think about how it can be made better and easier to use.
ETA: And thanks to pochjp- those were his liquid-to rice-ratios I used.

Rat, Once again great job. Wish I would have had something like this when I was learning 25 years ago. It seems just about spot on.
Just a note however.
The 15 gallon recipe seems like it would be pushing a very full pot. I usually use a few cups less of rice and about 45 lbs of meat.
Need a little room to build up steam and to be able to turn the rice.

Yeah, using the calculator to predict the volume of the finished jambalaya is a little iffy. This is one of the things that needs a good bit of improvement and I'm working on it.
I made a 1 gallon recipe (I thought) last week without using the calc, and I got a gallon and a half! That's one thing that made me start thinking about this project. That and I wanted to hone my Excel skills a little.
And while I'm at it, thanks to whoever posted about it on their blog. LINK

Oh its pretty damn close.
I will add this. I pushed my pot trying to feed 120 once used very close to what you have listed. I served 162 - 8 oz bowls till the last grain of rice was gone. So your end result is pretty spot on.

I find this also varies from pot to pot. Depending on the manufacturer and age of the pots. Some 15 gallon pots hold half gallon more and some less. Really takes time to learn the pots you own and what you can get away with. But I agree the 18 lbs rice is a healthy pot of jamb. Takes some tending thats for sure.

I started to mention this.
If I am not mistaken, the imported 15 gallons pots actually only hold 14-1/2 I was told.
