eggplant spears appetizer, ribeye with mushroom caps and squash casserole washed down with a few ice cold abita ambers .. i slept really well last night !

the eggplant spears were outstanding ! steak was cooked perfectly and i had little pieces of ice floating in my beer .. this equates to a perfect meal for me ... well done, sir ..

I'll tell ya something...I've been twice the past 3 weeks and both meals I had were excellent. Really impressed by them.

What do they serve with the spears? I've done some before but can't settle on what kind of sauce to use with them...put a whole eggplant through one of those french fyr cutters...PERFECT spears...

I've got one of those wall mounted commercial ones that they sell at restaurant depot. It's VERY difficult to cut the sweet potatoes but the eggplant is easy as can be.
