"Homemade" sushi

The gf and I are doing a sushi night and was wondering if any of yall had suggestions on rolls yall have made. One book we have has very few examples of sushi rolls to make. We are looking at doing at least 3 rolls and 1 desert roll. We will eat pretty much any type of sushi, we arent picky. TIA

Since tuna and salmon are the most readily available fish for sushi at whole foods, you might just want to stick with those and maybe some kani.
You can always do a spicy Tuna roll and add a layer of salmon on top rainbow roll style.
If you enjoy the "snowcrab" rolls at most sushi places around town, you can recreate the snowcrab by simply mixing imitation crab with mayo. Some places add fish roe but it isn't necessary. With a well crafted snowcrab roll, you can top it with fresh salmon and tuna slices for an almost rainbow roll.

The only homemade sushi I eat is sashimi. For rolls, there are too many sauces and ingredients to recreate that at home. I don't eat California rolls anywhere, so I wouldn't make that. I could see making some yellowtail rolls with scallions, but that's about it.

I've made tuna and salmon with avocado, carrot, cucumber, spicy rooster sauce (hoisin?) spicy mayo, and fried shrimp. The people I was with just kind of threw whatever we wanted on the roll.
I don't know what a dessert roll is but I have had mango and salmon and the spicy red sauce together which was great.

Hoisin isn't spicy, if it is a clear bottle with bright sauce and that rooster it is most likely sriacha(sp?) sauce
