I was thinking the same thing
I'd rather just go to a high end restaurant and try one of their desserts
I'm sure in a large enough city like L.A. or Chicago you could probably exploit that niche

Charleston had the closest thing to this...it was a sit down place. According to my friend, there is one is st. louis that does tableside dessert and other desserts.
