I had one a few years ago but the thing was a royal pain in the arse. It lost it's luster really quick. They're a bitch to clean and even more so to store.

at first i was like no they aren't, but then i remembered the only time i've used one was working at a restaurant and we got the hot water hose on that bitch.

I know all too well. I worked in a deli as a kid, but I really want to start doing my own meats, cured, smoked, etc. Some cheeses too.

french fry cutter. place potato in and pull handle. i used a friend's and it's fricking awesome.

tigerdup... Heads up... I saw one being sold at the Flea Market in P'Ville some months back at this guy's kitchen equipment booth. Didn't have stand that I can remember, and I think had to be mounted, but don't quote me on that. I'd check it out. Probably a good deal on it.

the one i used had a hole in each leg that you could screw down to a table.

i cut two 10 lb bags of potatoes with it in about 5 minutes. we had a big fish fry. it's freakin great.

Oh yeah, and another appliance I need or want is a Vacuum sealer. I would love to start pulling off some sous vide dishes, but that's not as high on the priority list as the slicer. Thomas Keller has me sold, but I'm not too sure how much I would actually cook using that technique on a regular basis. Otherwise, it's still a very good tool to have around the kitchen for freezing and the like, so it's up there.

I have a folding meat slicer, easy to store, but it does a fair job, not great. If you're going to cure your own meats, I do, a slicer is a necessity to get your corned beef and pastrami paper thin.

Cuban sandwiches as well.

I'm all into it. If you don't mind me asking andouille, how much did yours set you back? I've seen them range anywhere from 100 bucks to 5k, and I'm thinking probably somewhere in the neighborhood of 600 to 1k should get me more than I need, but I'm also looking at this for future food thing, so it can't be garbage.

I got this one long time ago for a Xmas present, not the best, but serviceable

Thanks andouille. I might be going a little overboard. That might be all I need for now. I just don't want to limit myself, but I've been known to bite off more than I can chew. Looks quite practicle for home use, and probably light catering stuff as well.

Saw something similar at Tramontes they're selling which looks just like the green egg, but has a real nice wood work surface. Have you seen them?

Yeah, I worked in my friend's dad's meat market as a teen. Whacked the tip of my right thumb off slicing ham with one of those. The ones we used came apart fairly easily but still not fun to clean.

That said, it would come in handy at times.

How many vacuum bags do you go through? I always thought about getting one but I have always froze items in water. What other things do you use the vacuum for?
