In this case, it would be a BCS ranking, unless the top-two BCS rankings are within five rankings of each other, then it will go to a head-to-head tiebreaker between the two teams. If this were to have happened in the Big 12 in 2008, Texas would have gone over Oklahoma since the top two (OU and UT) were close to each other in the poll and UT beat OU head-to-head.
In the SEC's case, assuming a little triangle like this, it would be a combination of the pollsters and head-to-head results.

does it not go to division record first?
in which case they'd still be tied....

I don't think this is right.
In the SEC, I think the first is division record. If you eliminate one team with division record, then its head to head.

Uhh, if Bama looses to LSU, LSU looses to AU, and AU looses to Bama, that's three one loss teams.

Two-team tie-breaker procedure
1. Head-to-head competition between the two tied teams.
2. Records of the tied teams within the division.
3. Head-to-head competition vs. the team within the division with the best overall record (divisional and non-divisional) Conference record and proceeding through the division. Multiple ties within the division will be broken from first to last.
4. Overall record vs. all non-divisional opponents.
5. Combined record vs. all common non-divisional teams.
6. Record vs. common non-divisional team with the best overall Conference (divisional and non-divisional) record and proceeding through other common non-divisional teams based on their order of finish within their division.
7. The tied team with the highest ranking in the Bowl Championship Series Standings following the last weekend of regular-season games shall be the divisional representative in the SEC Championship Game.
Three or more-team procedure
1. (Once the tie has been reduced to two teams, go to the two-team tie-breaker format.)
2. Combined head-to-head record among the tied teams.
3. Record of the tied teams within the division.
4. Head-to-head competition vs. the team within the division with the best overall (divisional and non-divisional) Conference record and proceeding through the division. Multiple ties within the division will be broken from first to last.
5. Overall record vs. non-division teams.
6. Combined record vs. all common non-divisional teams.
7. Record vs. common non-divisional team with the best overall Conference (divisional and non-divisional) record and proceeding through other common non-divisional teams based on their order of finish within their division.
8. The tied team with the highest ranking in the Bowl Championship Series Standings following the last weekend of regular-season games shall be the divisional representative in the SEC Championship Game, unless the second of the tied teams is ranked within five-or-fewer places of the highest ranked tied team. In this case, the head-to-head results of the top two ranked tied teams shall determine the representative in the SEC Championship Game.

I was assuming Bama beats them in Iron Bowl...sorry, I thought you could have figured that much out

It's not the first tiebreaker for a three-way tie, but I was making an assumption in that the OP's scenario was AU, UA, and LSU all being 7-1, with our loss coming to Auburn, Auburn's loss coming to Bama, and Bama's loss coming to us. Then my scenario would play out.

SEC tie-breaker tries to get it to head-to-head if at all possible. If the case of this hypothetical though (all 7-1 beating each other), it would fall to the last rule of the head-to-head of the 2 highest BCS teams. If the highest rated BCS team is more than 5 spots above the other 2, they'd get it outright. My guess is that because Bama would beat Auburn late, that Auburn might fall below LSU and Bama in the BCS. That would let LSU win the West because of head-to-head, unless Bama was far enough ahead.
Damn Cocks!
