Nope, Choc. Not a fan of tripe. I'm not big on organ meats except foie gras.

Different thing all together.

My Sicilian grandmother used to make a tripe dish in a tomato sauce. She used to spend an inordinate amount of time scrubbing it beforehand. What she did after that, I'm not sure, but there are recipes online for Triappa alla Romana that look pretty similar to what she made.

I got something very similar at Baboo in New York. It was a lot like what she made.

I've wanted to try to make it myself, but it apparently smells up the kitchen something awful, and I'm not sure who else I could get to eat it. I might try it, though.

Never seen it on an Italian menu in Louisiana. I like tripe in Vietnamese pho, though. Never tried menudo, but I'd like to.

I've always thought of the stomach as an organ, but I believe tripe may be the stomach "lining", so perhaps it's not an organ meat. Muscle meat?

Are you talking internal or external? I believe you're looking for skin, but internally, it's the liver, as I recall.

I only eat tripe in pho... no idea how to cook it, but it's fun to eat.
