It really is quite terrible but I am so hungry I don't care.

I didn't put much effort into it.

Just 2 packs of boneless skinless thighs, the already chopped creole seasoning veggies from walmart, 1 box of low sodium chicken stock, 4 cups of water and lots of Mrs. Dash, Cajun Magic No Sodium, I think one bay leaf all in the crock pot.

Way too watery. To give it some flavor I add one teaspoon of worcestershire sauce and i teaspoon of srricha to the bowl before eating.

I'm restricting the hell out of sodium and carbs so getting the right recipe down on some things is taking time.

Next time I make this, I will brown the chicken, then make a roux (not too much since I'm restricting carbs), then cook the veggies down in the roux, add some garlic (which I forgot) then dump it all in the crock pot. I also won't use water. I'll use more stock.

I try to make 10 to 12 portions and stick some in the freezer and some in the fridge.

i'm a HUGE fan of these. i grill the hell out some boneless/skinless chicken thighs..at least 2-3x a week. they grill incredibly fast if you 'unroll' them and stick them on teh grill..certainly in under 10 minutes..and i throw a little garlic powder on them and some pepper jelly and they are insanely tasty. i could probably eat these every day.

Way to go!!
Eventually, you will lose your taste and need for salt.
It happened to me with whole milk. I switched to skim and it tasted like water. After a while whole milk tasted like heavy cream.
