Rabbits are best cooked down in a gravy imho. I would think a smoked bunny would dry and tough, but who knows. A deer ham on a smoker with bacon piled on it is gooder than hell.

never smoked a rabbit, but i have smoked a duck.

throw some ribs on there.

i like to get boudin and throw it on the smoker for a few hours.

You smoke the damn rabbit and then smother the SOB to reintroduce moisture and tenderize. Great for a sauce,gumbo,jam or beans.

If you foil it and put some pork fat in there, I don't think that would happen. It would almost be like a confit without the "curing" process.
