TD gardeners, anyone do any jarring ?

I have been making my own sweet pickles with all the cucumbers I have been growing. Just curious if anyone else has been jarring. If so what are you making?

I am putting up banana peppers right now and waiting a few weeks to harvest my cayenne peppers to make some home made hot sauce.

I've canned several quarts of bannanas and jalapenos. And put up a ton of salsa.

How do you can the bananas? Do you use a light syrup?

I cut them up in rings, put a clove of garlic in the bottom of the jar, then cram the jar full of the rings and add a little salt.

Bring equal parts white vinegar and water to a boil, fill the jars up and put the lids on. Then put the jars in a water bath or preasure canner to seal them. It's pretty easy.

My crop of tomatoes is almost done and obviously not gonna jar em. But I've got a crop of Jalepenos coming up and I doubt if I can eat them all as they ripen. Will probably pickle some.

Has anyone ever made green tomato pickles? We used to have them at this catfish place in Arkansas when I was a kid. Would love to make some with the leftover tomatoes on the vines. Anybody have an old recipe?
