Thing is, Ghana seems to be the most stable of the African teams and they're putting some serious talent in the Euro leagues (top shelf stuff too).

Well a lot of west African nations are putting some serious talent into Euro leagues, but its the same type of talent. They aren't producing great passers of the ball, or great finishers. They produce strong central midfielders, strong defenders, but no attacking players with a significant amount of creativity.

Ghana got to the quarters WITHOUT Essien. They were the youngest team in the Cup, and they defend extremely well. If they get some striking power (like Essien), then they are scary.

I want to say Ivory Coast as another African team, but they can't get their shite together.
