Is jambalaya any good after being frozen?

I've never frozen it, but with this cold assed winter we are having, I'm looking for some foods to cook on these weekends when there's nothing else to do. Any suggestions?

Yes. I have very good success freezing it short term...less than 3 months...though others have posted negative results on here before.

it still tastes great, but the rice will tend to get a bit mooshy, if it is a fairly long time to consumption.

It's ok in a pinch but rice does not generally freeze well, or should I say do well after thawing.

Put the frozen jambalaya directly into the microwave, cover with a paper towel, and heat thru quickly on high. You should have good firm grains that are well seperated. If it's been in the freezer more than a few months, I throw it away.

I would think that a firm rice like Uncle Bens would freeze the best.

If good jambalaya has been in the freezer a few months, what the hell is wrong? Good jambalaya should be eaten faster than that.

I usaually limit my "freezing before eating" time to one month max. on jambalaya. After that the rice just gets mushy when defrosted.

I've done it on occasion, when I make a big pot and want to have some for a night I don't feel like cooking. The sausage gets a little tough, but I've never had a big problem with it.
