Looking to cook some calamari rings but don't want to do them fried. Any ideas?

Its used a lot in salads and pasta dishes with red sauce.

Leave them whole and grill. When the steam turns to smoke, flip them. It should take just a few minutes.
I also stuff them once in awhile.
You can't beat flash fried with am aioli.

I was thinking red sauce over pasta but looking for a recipe someone had actually tried instead of randomly choosing one off the internet.

clean, leave whole, marinade of olve oil, lemon, pepper, salt, herbs for about 15 minutes. grill for about 2-3 minutes. light drizzle of some reserved marinade you set aside (not the dirt raw squid marinade).
grill some tomatoes and onions while you are at it. Serve it over a bed of arugula and crisp greens.

Where do they sell fresh squid in Lake Charles?

I've done several recipes in restaurants and at home, and it's just not that good not fried IMO. I always marinade. Can't remember any really good ones of the top of my head just remember not caring for them.

Thanks for the ideas.
The ones I was looking at were frozen in a bag at Albertsons, not fresh.
I think I might try to fashion a marinara with a touch of lemon and then either quickly grill and serve with the marinara or cook the rings in the marinara sauce.
If I do it I'll post the results.
