I will admit I'm a dork, but I have always liked the opening of the original Star Wars. The flyover of the star destroyer is pretty damn cool.

Saving Private Ryan is great. Patton is as well.

For setting the scene and the mood you could mention Gone With the Wind (the slaves working in the fields) and The Sound of Music (the flyover shots of the Alps).

Even though it really isn't a "scene" per se, I really liked the opening of Gods and Generals with the regimental flags blowing in the wind.

The opening of Be Cool was the funniest part of that movie.
