Lot of good ones so far.
I'll also add...
Pulp Fiction
The Dark Knight
Scream
These are by no means the be all and end all. I know there's a ton more, but for some reason I'm floundering right now....damn you vodka/cranberry. This is the type of thing I'll lay awake and night and think about.

I will admit I'm a dork, but I have always liked the opening of the original Star Wars. The flyover of the star destroyer is pretty damn cool.
Saving Private Ryan is great. Patton is as well.
For setting the scene and the mood you could mention Gone With the Wind (the slaves working in the fields) and The Sound of Music (the flyover shots of the Alps).
Even though it really isn't a "scene" per se, I really liked the opening of Gods and Generals with the regimental flags blowing in the wind.

I'm surprised no one has mentioned the Fight Club opening. Purely awesome.

The opening of Be Cool was the funniest part of that movie.
"Did you know in PG-13 movies you're only allowed to use the F-word once? You know what? frick that. I'm done."
