fajitas

Did this last weekend with some homemade chili powder...that I used as a rub....pounded them out and marinated in some lime juice before throwing them on the grill...they were really good...GF says best ever.

Best fajita steak. I marinate with some habeneros and throw on the grill for about 4 minutes. Wrap in foil to finish off and make even more tender. slice across the bias.

Cast iron skillet, two minutes on each side, on medium-medium high, will get you a decent sear and medium rare.

update....steaks turned out very good....I followed this methodology combined with hints from the posts of others.....next time, I will lighten up on the lime a little and possibly mix in a little olive oil....also may try them in the cast iron skillet, as I would like a little crustiness without overcooking....

one question....what ingredients would you recommend to use as homemade chili powder?...I used store-bought, but I think I could do a lot better....

McCormick's Chipotle Pepper marinate packet available in every grocery store. You mix it with olive oil, vinegar and water and marinate for a half hour (no benefit to doing it longer on a skirt/hanger/flat iron steak). Taste great when you making a fajita meal. I just squeeze fresh lime on the steak before serving. A little lime goes a long way.
