favorite way to make an omelet

I like chorizo and mexi cheese with jalapeno's but looking for new ideas.. What's your best omelet?

Shrimp/crawfish/crab....shellfish lends itself really well to eggs.

a few tricks that i find helpful:

1. nonstick omelet pan, of course.
2. generous on the butter.
3. whisk the eggs well for some air, some people blend them.
4. i pour a thin omelette over pretty high heat, swirl the pan to coat, loosen the edges, a little, add any veggies/meats(already cooked)or cheese, fold, then flip onto a plate. it's a really quick process...prob about a minute.

add a tad bit of pancake batter if available as well as doing the above. remember to sautee together all of your non egg ingredients and it will keep from being overly cruncy.


as for best omelet... crab cakes the morning after and jambalaya omelet.

If your from the AP you better make some of that jambalaya omelet.
