I read somewhere that, whenever the dead enter the moonlight and show their skeletons then turn back to normal, their wounds heal. In this case, Jack had entered and exited the moonlight a few times to heal, while Barbosa was shot in his "normal" state. So Barbosa went down, as well as a few others on the Pearl at the time Will dropped the coin. The fat, bald pirate that Barbosa shot earlier in the movie (to test if the curse was lifted) also lived.

Slightly off subject, but some people didn't understand why a few pirates expressed pain whenever they weren't supposed to feel anything. My guess is that they only felt discomforts (the pirate's splintering wooden eye, the skeleton that screamed when stabbed with a curtain rod), unlike food, "the wind on my face or the spray of the sea, or the warmth of a woman's flesh". I guess when Elizabeth stabbed Barbosa he was just a hardass and didn't flinch
