Duck in Gumbo

I have a couple of bags of frozen duck breasts in the freezer and am thinking about making some duck and sausage gumbo. Here's my question - how should I cook the duck breasts prior to putting in the gumbo? Boil, brown in a skillet - what do you guys suggest?

ah, that changes things then. Roasting might dry them out. This is also assuming that smoking them is not really an option.

yeah, slice/chop, season, pan sear, then into the gumbo. I would just put them in really late so you don't overcook them.

Duck breasts are not what you want in a gumbo. You really need a duck that still is bone in. Your breasts should be marinated in soy, honey and hot sauce. Then griled. Bonless meat needs a high heat and direct cooking method.

yeah, i generally only use dark meat in gumbos....but if he's careful not to let breast turn to mush or rubber it can probably work.

but, like you said it would be better to eat the duck breasts on their own....not in gumbo.

The breasts will be great in a gumbo. Season them, then brown in your gumbo pot. Take out and add your onion, b. pepper etc. and start your gumbo making. Cut up the breasts and add after you add your water. Andouille and oysters are great in a duck gumbo.

Honestly, if the still have the skin on there are much better ways to prepare them.

But, if gumbo you must have- duck, oyster and andouille gumbo is the good.

In any case sear the breast skin side down after seasonsing them.
