The Simon and Garfunkel re-make of their own song (the one that actually has drums) is an actual banger and is metal in feel, if not in actuality.

I haven't heard a few of these songs, original or cover, but my favorite is Type O Negative's version of Summer Breeze. They turned a yacht rock classic into a great goth song

Credited to Def Leppard, but technically a collaboration with the The Hothouse Flowers, the bands performing together are known as "The Acoustic Hippies from Hell" (a better known collaboration from them appears as From the Inside from the DL album of covers/B-sides, Retroactive.)
