Grass fed wagyu / angus beef

My neighbor just gifted me about 100 lbs of beef. He is a fully regenerative farmer and has recently slaughtered a few steer. He is experimenting with crossing an A5 wagyu bull with angus heffiers that are all grass fed to try and bridge the gap between taste and texture and health benefits of natural grass fed.
I am anxious to try some , and with the current price of beef, what a great gift.
