Coconut shrimp

Now that Roux 61 closed, who in Baton Rouge serves good coconut shrimp?

Even though it was a shite restaurant Joes Crab Shack had the GOAT coconut shrimp.
Man they all closed though.

So good. AP flour mixed with coconut. Then butterfly shrimp dredged in flour, eggwash then flour coconut mix. Then fried.
The sace was orange marmalade mixed with creole mustard.

I don't know anyone who makes it so i make it at home at times.

The only places I know still with it are Outback and Drusilla Seafood. Two places I never go, so I sadly never get to eat coconut shrimp.

Bonefish had a good one but is gone. Internet says Bullfish Bistro has it, but I have no idea how that place is anymore. It moved across town and I think has different owners.

Don't have a restaurant rec, but if you've got an itch you're trying to scratch, Whole Foods has bags of frozen Coconut Shrimp that really aren't too bad out of the air fryer.

Paul Prudhomme developed that recipe...same one that's in Louisiana Kitchen.
