Greek Cruise port advice needed

I’m taking a cruise next September on the Celebrity Xcel. It stops in Santorini, Ephesus, Mykonos, Rhodes, and Valletta Malta and ends in Barcelona.
I have an excursion I’m happy with for Santorini, but am not sure what to do in the other towns.
For Mykonos, I thought we would do a quick excursion to Delos then take the public bus to the beaches and do a “beach walk” from Platys Gialos to Paradise Beach, stopping at a few beach bars. I just read the beaches aren’t really nice so maybe we should just walk around the “old town” area.
For Rhodes, I have booked a “medieval walking tour” which includes the palace, then we were going to walk around Old Town and eat lunch there.
I have no idea what to do in Ephesus or Malta. Any suggestions or criticisms of the above plans are welcomed.
Also, we will have one full day in Athens pre-cruise and one full day in Barcelona post-cruise if you have any suggestions there. Thanks!

Good thing you have an excursion in Santorini, hopefully it is with the cruise line. Excursions go to the other port where buses can drive down and pick you up rather than having to wait for the cable car.
I loved just walking around Rhodes,, it is a beautiful city.
Mykonos is easy to just walk around, but it is a tender port, so kinda difficult to get to and from the ship. Are you overnighting in Mykonos, it is fun to go back and night and hit the clubs. During the day I would just walk around the town, it is really pretty.

Ephesus has some of the best preserved ruins I’ve encountered. There is lots to see in there (look up the Celcus library). In addition, I don’t know if you are religious or not, but there is a sanctuary where St John took the Virgin Mary to live after the death of Christ. I highly recommend it. There is a chapel, prayer wall and beautiful grounds with Turkish coffee. Many people do a pilgrimage there, and honestly even if not religious I would recommend seeing it.
ETA: for clarification, the ruins and Virgin Mary house are separate locations but not terribly far apart. The biblical history that you can see in Turkey is really amazing. Ephesus is the people St. Paul was referring to in his letters to the Ephesians.

How long are you there? That seems to be pushing the time for a day. We were on a Celebrity cruise last year with similar ports. We took the bus to Elia and hung out there. It was beautiful. The first bus to Elia wasn’t until 10 so we walked around the port area before.
We actually did Santorini on our own and it was a lot easier than I expected. Got off the ship early, no line for cable car, hiked Fira to Oia, walked around Oia a bit before bussing back to Fira and taking the cable car back. Just putting that out there for anyone who might get intimidated by reading how difficult it is. It doesn’t have to be.
Took a tour in Ephesus but I didn’t love the one we did. We skipped the Virgin Mary house then after we got home everyone asked if we did it and my husband was upset we missed it even though it’s supposed to be a tourist trap.
We did Rhodes on our own.
You need to go the Acropolis in Athens. Book an early time because it’s hot. September is better than July but still. If you like high end dining, you can find Michelin-starred places that don’t cost 250pp. If you like casual stuff, there’s plenty of that too. Try loukemades if you get a chance. And be wary of cab drivers. They are notorious crooks. We used public transit a lot and Uber if we needed a car.

Mykonos - walk through old town to the edge, there you will find lots of folks renting 4 wheelers. Rent one and take off, go explore the whole island on your own. Had an absolute blast doing that and its cheap
Malta - walk off the ship to the main road and there will be cabs sitting there. Hire one. They offer various options (full day, half day, etc). They all have a posterboard with all the main attractions and you pick want you want to see like a menu. Super easy and cheap. They will customize however you want. Malta is cool as shite, especially Mdina - if you are a game of thrones fan its a must. So much military history there on that island
