Best Family Friendly All Inclusives in the Caribbean

Need to get some help from the board as I am completely out of my element here. Mrs. H2O wants to head to the Caribbean for New Years and her parents are pushing hard for an all inclusive. Personally I'm not one to overpay for buffet food and cheap drinks but they feel this will be easiest with our 18 month old.
Wife is adamant about not going to Mexico, we've been there plenty in the past so she wants to go somewhere new (my argument about that not mattering if you never leave the property didn't work).
Aside from a couple of days on spring break in college and a few cruises, I've never done the all inclusive concept so any tips and tricks are also appreciated.

I recommend avoiding Jamaica.

Hyatt Ziva cap cana in Punta Cana. Great pools, drinks are pretty good. They have a great water slide area for kids. Also has an adult only side you can go

Looks amazing but I don't think I'm willing to shell out $1800 per night.

Don’t know you personally but having followed your travels and standards on this site for a while, I feel for you.
Maybe you can sweet talk them into a villa on St. Barths instead. High season so that kind of crushes the budget, but think you’ll find a happy medium there.
