Mountain vacation over NY break

Kids (2, 5 & 7) are wanting to do another mountain trip to see snow again this year. Wife & I were hoping to be done with the pigeon forge/Gatlinburg touristy area. But the kids absolutely love Dollywood & Anakeesta.
What are some ideas/locations that I don't know about that may be about a 30–60-minute drive into those 2 spots; or nowhere near there and have similar theme park ideas. We drive there from NOLA, so we don't have to deal with flights, car rentals & car seats
Or typical Gatlinburg/Pigeon Forge trips usually involved 1 day hitting Apple Barn and local outlets for winter gear (better winter selection in TN than in NOLA), 1 day at Dollywood, 1 day at Anakeesta, 1-2 easy hike days, 1 random day where we get sucked into the touristy area.

Go out west. If you can afford pigeon forge you can do the front range in Denver or thereabouts.
