Costco sells beef bulgogi that's already marinated and includes vegetables, making it easy to throw on the griddle.

Diced meat like beef, chicken or pork. Cook fast while you warm some corn tortillas on the cooler side.

Tacos with different sauces and toppings / onions, cilantro etc.

Other than prep, it comes together in 5 minutes or so.

Bacon, favorite sausage cut lengthwise, fried eggs, hash browns. In that order.

Respectfully and I'm sure I'll get downvoted to hell and I get it, mexican is not easy to "cook" because its a ton of prep and a ton of clean up generally speaking. Its one of my personal pet peeves I guess, thanks to my wife.

My wife thinks its easy and we are eating 45 mins later and then I'm doing the damn dishes and she takes shite like the sour cream and salsa out of the original jars and puts it in bowls and I gotta clean it all. Makes home made guac, home made rice, etc. Kitchens a mess.

"Easy" blackstone meal is sausage/ sandwich with a side of chips, IMO.

You can buy pre sliced meat for something like a fajita or Philly cheeseteak and then toss it on bread and call it a day with some chips or something. That's "easy" to me.

Steaks with a roll and a pre made salad, to me is easy.

IMO something that's overlooked is the amount of silverware and plates needed. Easy camp meals to me need nothing more than one paper plate and a napkin and throw that all in the fire, or a bowl and a spoon.
