Left St Louis Style Ribs Out All Night

Uncovered in the oven. I opened foil to let them brown and turned oven off around 5pm yesterday evening. Just remembered they are still in there. Is it still edible? Thanks

If they were cooked when you turned the oven off and you had salt in your rub yes they’re fine.

They might give you the runs but they won’t kill you .

Heat 'em up and eat 'em up.

I'd wrap them in foil with a little sauce or sprinkle of water so not to dry them out and enjoy.

They were in oven at 350 for two and a half to three hours wrapped in foil

Cooked meat sitting out for 14 hours is not considered safe to eat.

A general rule of thumb is cooked food should only be left out at room temperature for 2-4 hours. Your ribs stayed hot for a couple of hours in the oven. So, for a few hours, they were perfectly fine in the oven, but after a few hours, they are now at room temperature for well over 4 hours.

This is factually incorrect. Leaving cooked food in an oven for 14 hours is not safe and salt would only come into play if it was an excessive amount of salt (dry salt pickled meat status).

Newborns, elderly, pregnant women, people with kidney disease or autoimmune diseases may die. Healthy people will not, but they can still get food poisoning.

This is incorrect.

If enough bacteria grows, heating them up again may not kill enough of the bacteria to make it safe to eat. Heating to a certain temperature only kills X amount of bacteria, it does not kill an infinite amount. If an excessive amount grows, it won't all be killed by heat.

In addition, some bacteria form spores which are not killed with heat.

So 12 hours in an oven that was never opened? Yeah, that would be my breakfast this morning.



And how do you forget that you cooked ribs? Weren't you planning on eating them?

This is shite you get from ServSafe. If it was a restaurant, no way I would serve it. But your talking more about liability than anything. Literally 10s of millions of people every day don't abide by those rules and are fine.

Ha, I was cooking couple other things at same time then oldest son had to bring something down the road so left to do that. Wife picked everything up (or so I thought) when got back from errands. Remembered not seeing ribs in fridge last night and opened oven and found them.
