Melon caprese salad

1cup cantaloupe, small cubes
1cup watermelon, small cubes
8oz mozzarella pearls
Lots of Basil (one of the grocery store container, maybe more. Don’t think you can have too much basil in this), chiffonade
I think mint would work well also
Salt liberally (I think this is very important)
Toss to incorporate

Dress with honey lime vinaigrette
1 lime juiced
Equal part of olive oil and honey

This is a lovely summer salad (or even dessert).

Melon is wonderful caprese style. I really like watermelon that way. I usually serve it in a Napoleon style drizzled with balsamic glaze.

This is the one we are serving right now. It has burrata, a white balsamic reduction and pistachios
