Beef Tallow French Fries

One of the kids is asking me to make french fries with beef tallow.
I have never cooked with tallow before, anybody got any tips or suggestions? Is it worth the extra expense and trouble?
I have made a lot of fries with canola oil, should I just do it the same way or do the temps have to be adjusted?

You make french fries but instead of using oil you use tallow.

McDonald’s used to use a blend of oils including beef tallow for their fries. Then came the cholesterol scare and they changed frying oils.

I've done it before using tallow from brisket trimmings. No changes to temps needed. Use your favorite double fry method, then filter the tallow and store it in the fridge for future use.
Was it worth it? Meh...I did hushpuppies and corn pone on the second round and will highly recommend that.

I still remember lfiting that heavy arse block of lard and dropping it in an empty vat. Took maybe five minutes for it to melt down to frying oil. One of the more entertaining jobs at McDonalds back in the day.
