I have a one year old lab that refuses to go downstairs any other way than a full sprint. Any tips to break that habit?

Put it on a leash and show it how to walk down properly until it does.

Anyone know how to keep a 1 year old lab out of the swimming pool?

Don't let the dog get in the pool.

Does your pup know how to sit and stay? If not, get pup to stay with verbal and hand command. Then move to below:
Does your pup know how to heel next to you? If not, then practice heeling.
Once you get pup to heel on sit and at walk next to you, move to stairs and have it heel on each step up and down.
You can then use stay command to stop puppy at top and bottom and slow it down and heel when walking down and up.

I love water dogs but this can be very frustrating. It's the same questions as "how do I get my dog to stop rushing out of the doors".
You have to let them know you are the alpha. Dont be mean or harsh, but be firm. When you pour their food, say their name and put it down in front of them. It lets them know you control the food source and are thus king of the house.
Put them on a leash around the pool or doorways. Start to walk around but do not let them pull on the leash - if they do, give a very firm jerk back (youll have to do this a few times) until they walk next to you, not ahead of you. They need to metaphorically and physically follow you.
This takes time and practice. Improvement will happen in a week or two, mastery in a month or two. If you want to be completely honest, it's a lifelong skill to maintain. Have "walking practice" for 20 minutes weekly (its a good excuse to get out of the house and walk!). Always do the food-name thing.
Good luck, Labs are great. HOpe you and your family have a great time wiht him/her.
