Hanger Steak at Emerils

The wife and I are going to Emerils for lunch before the Hornets game today. They have a $20 lunch special where you get a soup, entree, and a desert. One of the entree's is a hanger steak. Anyone ever had it???

Hanger steaks are similar to flank steaks - lots of flavor but tough as leather if not prepared properly. Just don't order it over MR.

They won't cook it over medium rare. If you ask for it beyond that they will tell you to order something else.

It may be my favorite cut of meat...it's much more flavorful than regular cuts.

It was called the butcher's cut for many years for a reason.

Yeah, I have had this cut several times now at La Bocca and it has been outstanding each time and never once tough. I am getting to where I would probably rather have this than a much more expensive regular steak.

Make sure you cut against the grain...that will remove any toughness.

I would trust that this is a great dish...Emeril's is an excellent restaurant.
