Just booked for July. Any recs on a decent course. Taking my daughter so not the most difficult course.

El Camaleon at Mayakoba is the easy answer. I played it before the LIV tournament was there last year. Great course. One of the fairways has a cave in the middle of it.
Pro tip: Coatis, which are basically Mexican raccoons, freely roam the course (and the whole region) in packs and will steal your smaller things and food from your cart if you step away from it. Make sure you zip up anything you don't want stolen in your golf bag. Those little bastards are smart and quick, you'll have zero chance of getting something back from them.
ETA: Vidanta has a fun little par 3, Iberostar's course is across the highway from Vidanta. Gran Coyote is near Mayakoba as well.

Just played PGA Riviera Maya in December.
Was really nice, but I was not blown away by the course for the $200+ green fee and rentals were $100 but its vacation golf so who cares. One hole had a cave and the par 3 at the end was picture worthy. Was very surprised to see no starter or marshal around the course. Pace of play was pretty slow because of that.
The service from the staff was great. Club House is incredibly nice and still renovating around the entire compound. The bar at the driving range and the turn is very cool. Did not get a chance to try the pizza they were making in the coal fired oven. Great prices on the beer from the bev cart girl.
Would have preferred to play El Camaleón but it was quite far from the resort we were at.
