Chiang Mai, Thailand - Advice?

Looking for advice in all things in and around Chiang Mai. Food stalls, market, restaurants, day trips etc.

Stay in old town within the walls
Hit the north gate jazz club and the food stalls across the street
Go to Pai and Chiang Rai
Go to an elephant sanctuary
The Sunday Night walking market is fine for a first timer
Hit at least 3 temples in old town
Walkthrough the Chinese markets
Have a cocktail at the Anantara on the river
Catch a Muay Thai fight at the old school venue
SP chicken is popular but solid
Lots of upscale eats you can peruse online

Ignorant response as expected on this board.

Chiang Mai is a small mountain town in the north that does have tourism, but is not overloaded with sex-pats.

I've been all over SE Asia and been to many temples. Do any standout as unique here? I always appreciate the experience, but I feel as if my temple boxes have been checked at this point.

There's so much information out there for this and so much bad information as well. It's a hell of a time trying to read between the lines for some of this stuff when trying to find a good tour, driver, or method to see. I think I'll have to bite the bullet and dig in and make a plan.

We've got a hotel literally on the street outside of the walls. Does that matter?

Yeah typical response, Idiots but I don't care...their loss. Beautiful country, people, food, etc.

You are fine just outside the walls …. It’s a small, very walkable place

I have worked in Thailand for 2 of the last 5 years, so have some contacts for tour guide recs if needed

After a heck of a day on an American Express eco-tour of Elephant rides through jungles and rivers, mountain biking and serious white water rafting where in you could die, I had the best margarita in the whole world at the Empress Hotel Chiang Mai.

Spent about a week there and will go back eventually. Bought some nice jewelry in some high-security mining owners show room.

See everything. Great place.
