Slow Cooker Recipes???

Anyone have any good slow cooker recipes they would like to share? I feel like breaking the crock pot out....just need some good ideas. Thanks

Combine:
1 cup trinity
1 cup rice(Zataran's or Uncle Ben's)
2 cups water
1 lb. crawfish tails(w/fat, no asian shite)
1 tblspoon oil
1 teaspoon salt
1/2 teaspoon cracked pepper(3/4 tsp if not fresh)
1 bay leaf
drop all ingredients into a rice cooker and press the button. Crawfish jambalaya in 30 minutes.

Assuming it's big enough for a chicken put the whole chicken in there and add chopped onions, garlic, red pepper, chicken stock, celery salt.
If you're going to work put it on low. It'll be done in 7-9 hours.
If you're at home cook on high for two hours, then add carrots and mushrooms and cook another hour or two. Remove the chicken and then strain the stock and veggies out so you're left with just liquid.
Put that liquid in a rice cooker with white rice and you've got seasoned rice as a side dish besides the carrots and mushrooms.

I did a mushroom and spinach stuffed pork loin yesterday and it came out great!
2 - 2 1/2 lb boneless pork loin
2 Tbl EVOO
3 Garlic cloves, finley chopped or pressed
1 (8 ounce ) Pkg button mushrooms, chopped
1 pkg (9 ot 10 oz) frozen chopped spinach, thawed and squeezed dry
1/2 C soft bread crumbs (about 1 slice)
1/3 Cup grated Parmesan
1/2 tsp salt
Directions
Cut pork so it can be filled and rolled.
Heat 1 tbl of the oil in a 12" skillet over medium high.
Cook garlic and mushrooms in oil stirring frquently, until mushrooms are tender and liquid has evaporated.
Stir in spinach, bread crumbs and cheese
Spread mushroom mixture on inside surface of pork
roll up up pork; tie with kitchen twine.
Heat remaining Tbl of oil in 12 " skillet over medium high.
Sear pork until brown on all sides.
Place roast in 3 1/2 to 4 qt slow cooker.
Sprinkle with salt.
Cover and cook on low setting for 6 to 7 hours or until pork is tender.

I do this beef stew, but it requires a little work before hand.
Coat some beef tips in flour and fry.
In crock pot add fried beef, about 3 cups of water, 2 beef boullion cubes, some carrots, onions, whole garlic, and some quartered red potatoes. Cook on low for about 6 hours and you've got a really yummy beef stew.
Cook some rice and serve over.
