Grit progression

I’ve had a Ken Onion Workshop for a couple of years and a couple of the belts finally gave way. I ordered a replacement pack that has the following coarseness.

Grit Coarseness

This is different from standard pack that comes with the machine. If I’m looking to sharpen some dull kitchen knives which belts should I choose and how many strokes per side should I do?
