Carnival has a 5 night out of Galveston leaving on the 21st. It’s on the Breeze; I’ve been on that ship a lot. It’s one of their better ones.
Hyatt Regency Lost Pines resort outside of Austin.
Staycation at the Gaylord, Drover (Ft Worth), Anatole, Omni Frisco.
Vegas should be super cheap that week.
New Orleans.
Air BNB out at Cedar Creek Lake.
Hill Country.
Palm Springs.
Savannah, GA.
Puerto Vallarta or Cabo.
Miami, Sarasota, Ft Lauderdale, Naples, Key West, Emerald Coast.

We're going on the cruise in June. Done it before, ship is nice.
Going to Cabo in February.
She's decided to narrow it down to Key West, Vegas, or Seattle.

I’d pick Key West out of those 3.
Farther up the keys in Islamorada would also be nice if you’re flying into Miami.
You could split your trip and stay a few days in Islamorada and a few days in Key West.
ETA- Naples or Marco Island are also good options for that time of year.
