Skip the dried sage. It can be very bitter depending on how long it has been sitting on the shelf. I ruined a gumbo this way. Sub a little marjoram if you have it.
ETA
I would also skip olive oil and use butter or bacon fat. A little bit of good vinegar added in works nicely and gives it a traditional flavor that you can only get from pickled pork.

Cook them longer or take a couple bowls out and mash them with a potato masher then add them back to the pot.

Buddy prefers them unmashed and they're fairly soft to mash on my own bowl.

I've never had chicken with red beans and rice, but I have had a lot of fried or grilled pork chops as a side-------not that it is necessary since beans and rice are quite filling, especially if there's a good bit of sausage, ham, pickle meat, smoked meats, etc. in the beans.
Just a bit of homemade cornbread or French bread and I'm usually good to go.
