JJ Watt stated in that interview that it’s not just kinda off at times. He said that the PFF grades would be night and day from the coaches grades. And I assure the coaches know more than the pff guys.

Again, its not a perfect solution (nothing is, even coaches can have a bias themselves) nor is it ever billed to be. But its used by NFL teams, heck they introduce players with their PFF rank compared to others at their position during broadcasts. It's an impartial view of every snap someone plays and when you aggregate the large amount data it's going to be generally "right". This is way more reliable than someone coming on here and going "oh man I saw him in 1 game and he was really good!"
Again, dont you understand that? Who would you trust more, someone who said they saw someone play briefly and pointed a few plays who might transfer to said school now or an impartial service that grades every single play someone is on the field for? I'm definitely going to lean more on the latter. Again, individual people watching a game casually are only going to remember highlights and lowlights, not 70 out of 70 snaps for 1 specific player unless it's like a QB or something who touches the ball every play.

That is anecdotal evidence from someone who is already biased
