Traditionally for a coast-to-coast drive, you picked I-10 in winter when more northern roads might have snow. Starting in La, I-10 makes the most sense. Whichever take a few detours on 2-lane blacktop (mostly 4-lane now).

I-20 becomes I-10 163 miles east of ElPaso. Stop at Cattlemans Steak House for a great meal about 25 miles east of ElPaso.
I-10 thru New Mexico and southern Arizona is pretty easy.
Stay on I-10 until you get to I-8 and take it to SanDiego.
Take PCH north to LA. Beautiful. Go to the Hearst Castle while you are there near Big Sur. Thank me later.
