I use pickle and/or jalepeno juice in my hush puppies. Occasionally, I'll also use it as the binder on the fish.
It can replace vinegar in pretty much any recipe or other use since that's all it really is. My wife hates the smell of regular vinegar, but loves pickles so I use it in a lot of stuff.
