For the most part, yes. Once a stroke is developed it isn't going anywhere. Sure, with time off you'll lose some of the technique but the overall stroke is what it is and if the correct habits were developed they will still be there.
Now, fitness on the other hand is a different story. That begins to wither away after a couple weeks off.
