When I was there 2 years ago there was at least 3 if not 5-6 trying to take idiotic shots, selfies, etc. that were either hogging the best spots for unreal amount of times or were damn near trying to die. One girl had her dog there and the dog wouldn't get any closer to the edge to get in the photo and she tried for far too long to get it to move. Damn thing was smarter than she was.
Given that, this really isn't a SW trip OP. Maybe change your title to Nevada and south Utah trip or something?
Zion is well worth time. Moab is great but you won't have time for there.
Definitely look up the state parks, there's a lot of great state parks also and many of them have a lot less people. They are just smaller or otherwise not quite NP worthy but still fantastic to visit.

No doubt, it can get crazy. Was there at sunset on June 1 last year and there were busloads of tourists (sunset is obviously a popular time for pics there). The was an Asian family at one of the popular lookouts and the father spent 10 mins positioning his teen daughter for pics. The girl was sitting right on the edge and was scared and crying and he kept barking at her and repositioning until someone told him to get the hell out of there. It is definitely worth the trek and I got this perfect pic of my girlfriend as the sun was disappearing below the horizon. If in the area you have to go. Will be there again the same time this year and kayaking the Colorado below the next day.
