similar to the OP, my wife is wanting to do a carribean AI this spring. Not so much looking for suggestions, but insight into the whole AI concept because I've never done it either. I'm sure it varies by property but what's the catch on AI, cost vs convenience? What's commonly NOT included that's still on the property?

The only thing usually not included is they have private day beds for rent and the non house wine you have to pay for.

I've done Excellence a few times. I guess the only thing that is NOT included would be big excursions away from the property. I will say outside of that, I have not wanted anything that the property did not have available to me. I guess the catch is, you pay for everything upfront outside of some tip money. That's one of the reasons why I like it. My all in cost for the trip is practically paid for months in advance and I don't need to budget for extra food or drinks etc.
